This recipe is a high protein quiche that can be made with or without a crust.

The crustless quiche is called a “frittata”, and is lower in calories, yet just as great tasting.  You can also make mini-quiches by lining muffin tins with dough, filling, and baking just ten minutes less.

This recipe can also be used in a 9” x 13” glass pan if you have extra filling, but it will need a few more minutes baking due to the pan being deeper.  This recipe is very versatile for anyone’s taste, and makes a delicious quiche that is very nutritional.

Quiche Pie Crust Ingredients:

1 8-inch, or 9-inch pie plate

1 ½ cups unbleached, all-purpose or whole wheat flour

1 teaspoon salt

2 teaspoons sugar

½ cup canola oil

2 tablespoons of milk or soy milk

How To Make Quiche Instruction

Preheat the oven to 400 degrees

Mix dry ingredients in the pan you choose to bake in.

Pour the oil and milk over the dry ingredients and blend with fork or fingers until liquid is absorbed

Press the dough firmly into baking dish

Bake for 10-12 minutes and remove to cool

How To Make Vegetarian Quiche With Or Without Eggs

This is a vegetarian quiche recipe without eggs, for the vegan.  It is a very basic recipe using Tofu in place of the eggs.

If you want to use eggs, just use 4-5 eggs for each 9-inch quiche that you make in place of the tofu.

Vegetarian Quiche Filling Ingredients:

1 medium yellow onion, diced

4 cloves of garlic, minced

1 tablespoon olive oil

10 ounce package of frozen vegetables of choice (thawed and drained) or approximately 2 cups of your favorite sautéed vegetables (up to 4 cups may be used, if desired)

1 pound of firm, or extra-firm tofu (Silken Tofu will produce a creamier quiche, while regular or firm will make it sturdier, and drier)

½ cup unsweetened or plain soy milk

1/4- ½ teaspoon Dijon mustard

¾ teaspoon salt or to taste

¼ teaspoon nutmeg

½ teaspoon ground red pepper (optional) and black pepper to taste

1 tablespoon dried parsley (optional)

2 tablespoons nutritional yeast or grated vegan Parmesan cheese

Directions:

Using a large skillet, heat oil over medium/high heat

Saute onion and garlic until golden

Stir in thawed or cooked/steamed vegetables

Combine tofu and remaining ingredients, processing until smooth

Combine tofu and vegetable mixture in a large bowl

Pour into baked pie crust

Bake in preheated 400 degree oven for 35-40 minutes or until set

Allow to cool for 5 minutes before serving

This recipe is also very good with sautéed asparagus and diced sun dried tomatoes.  The recipe is very basic, and you can add any vegetable, or vegetarian meats that you like.  The eggs that you will use for a 9-inch pie are 4-5, and the amount of vegetables and/or vegetarian meats used can be from 2-4 cups after cooking and draining.  This recipe is so easy without rolling a crust, and you can make the frittata without any crust also.

Quiche filling variations

The great thing about quiche is that you can add just about anything that you like in the filling.  The basic ingredients are the crust, and eggs or tofu for the filling, and then you add other vegetables, vegetarian meats and/or cheeses, and spices to taste.  If you have too much filling left over, store it in the refrigerator, and you can have an omelet with the unused filling for breakfast!
