Breakfast Quiche

Breakfast quiche is a great dish to serve for breakfast or brunch.  Breakfast quiche is something that you can make ahead of time for guests, and reheat if they do not arrive on time. Breakfast quiche can even be eaten cold.  It is nutritional, and can be designed from your favorite ingredients.

Vegetarian breakfast quiche is just as delicious as meat quiche, but you substitute meats that might be used such as sausage or ham.

These are a few quick, but very good recipes for vegetarian quiche that can be served in the morning, at lunch, or can even be enjoyed as an evening meal.  The eggs, or egg substitutes hold everything together in the crust, and then your imagination can run wild with the ingredients that you choose to add to your breakfast quiche. Here are a few of my favourite breakfast quiche recipes:

Vegetable Breakfast Quiche

Ingredients:

One nine-inch pastry shell

1 ½ cups chopped onion

1 medium green pepper (diced)

1 cup chopped tomatoes

½ cup chopped zucchini

½ cup sliced fresh mushrooms

2 tablespoons butter, margarine, or substitutes

¼ teaspoon curry powder

½ teaspoon salt

¼ teaspoon pepper

pinch of ground cinnamon

5 eggs

¼ cup milk, or soy milk

¼ cup grated Parmesan cheese

Directions:

Bake pastry as directed.

Sauté onion, green pepper, tomatoes, zucchini, and mushrooms in butter.

Add curry powder, salt, pepper, and cinnamon, and mix well.

Spoon vegetable mixture into crust.

In medium-sized bowl, beat eggs, add milk and cheese, and mix well.

Pour egg mixture over vegetables.

Bake at 350 degrees for 40-45 minutes until knife inserted in center comes out cleanly.

Let cool for 5 minutes before serving.

This recipe serves 6

Dairy-Free Vegan Breakfast Quiche

 Ingredients:

One Dairy-Free Pie Dough

2 tablespoons olive oil

1 cup finely chopped yellow onion

4 large cloves garlic (finely chopped)

4 ounces chopped vegan bacon

1 teaspoon salt (divided)

¼ teaspoon red pepper flakes

2 cups fresh broccoli florets

1 pound firm silken tofu (drained)

2 tablespoons lemon juice

1 tablespoon tahini

1 tablespoon rice vinegar

1 8 ounce package Vegan Cheese of your choice

 Directions:

Bake pie crust as directed.

Heat olive oil, and sauté onions until caramelized, 6-8 minutes.

Add garlic, bacon, salt, and red pepper flakes and cook until you can smell the garlic.

Transfer this mixture to a bowl, and set aside.

Steam broccoli florets for 3-5 minutes, or until bright green and lightly crisp.  Toss into the onion

and bacon mixture.

Process the tofu, lemon juice, tahini, rice vinegar, and ½ teaspoon salt in a food processor until

evenly mixed.

Crumble the Vegan Cheese evenly into the bottom of the cooled pie crust.

Pour the filling on top of the cheese.

Bake for 45-55 minutes at 350 degrees, or until golden brown and set.

Serve hot, serves 6.

 

Sweet Fruit Breakfast Quiche

Ingredients:

1 ½ cups milk, or soy milk

2 eggs

1 teaspoon vanilla

1 cup fruit (fresh or frozen) grapes, strawberries, peaches, apricots, or your own combination

1 9 inch pie crust, baked as directed

Directions:

Heat milk, just to boiling, then remove from heat.

Beat eggs, gradually adding vanilla.

Add milk to the egg and vanilla mixture.

Stir in fruit, and pour into already baked pie shell.

Bake at 425 degrees for 30 minutes.

Serve with yogurt if you like, and it serves 6-8.

Apple, Cheddar and Vegetarian Bacon Breakfast Quiche

Ingredients:

One ready to bake pie crust (or you may choose to make your own)

2 large apples (cored, and cut into bite-sized pieces)

1 cup apple cider

3 strips vegetarian bacon cut into 1 inch pieces (optional)

½ teaspoon chopped rosemary

1 cup strong cheddar cheese (grated)

2 eggs and 1 egg yolk (lightly beaten, at room temperature)

½ cup cream (half and half)

½ cup milk

Directions:

Simmer the apple pieces in the cider until tender (3-5 minutes).  Remove and set aside.

Simmer remaining cider until reduced to 2 tablespoons.

Cook bacon and put aside.

Pre bake crust as directed.

Spread apples and remaining cider onto bottom of crust.

Mix eggs, cream, and milk, then pour into crust.

Bake in preheated 375 degree oven until golden brown for 25-45 minutes.

This recipe serves 6

 

More Breakfast Quiche Ideas

The recipe for breakfast quiche is very basic, and depending on what you or your guests eat for breakfast, it can be directed toward fruits, or vegetables.  For strict vegetarians however, milk can be substituted with soy milk, almond milk, or rice milk.  Eggs, the primary ingredient, may be substituted with silken tofu, and yogurt cheese. Vegetarian cheese may substitute for the cheeses used above.  The options are limitless, but the quiche is a very easy and nutritional meal to serve, whether it is a breakfast quiche, or served for lunch or dinner.
