Spinach Quiche
This vegetarian spinach quiche recipe is one of my favourite quiche recipes. Not only is it quick and easy to make, it also tastes delicious. You will get health benefits of the many nutrients along with the beautiful green color that it adds to your quiche.
Which spinach to use?

Fresh or frozen spinach may be used in this recipe. Spinach can be grown year round, so if you prefer fresh spinach, just make sure to wash it thoroughly of pesticides and sandy soil before cooking.
Savoy spinach is very easy to find in most groceries. Look for spinach whose leaves are crisp, bright green, and do not have brown spots. After washing thoroughly, you will cook in a non-aluminum pan with a little water or tablespoon of vegetable oil, until the leaves just begin to wilt, and turn to a bright green color.
Because spinach is rich in vitamins A, C and Iron, it is a great vegetable to use in quiche for the nutritional benefit alone.
Cooking Tip
Don’t cook the spinach for too long. If you overcook the spinach, many of the vitamins, minerals, and iron will be lost.
Spinach Quiche Recipe
Ingredients For Quiche Pie Crust:
- 1 ½ cups unbleached flour in large freezer resistant bowl
- 2/3 cups cold vegan spread
- 3 Tablespoons ice-cold water
- Floured wax paper, or surface for rolling with floured roller
- 9 inch glass pie plate
Quiche Crust Directions:
Chill measured flour in bowl in the freezer for 30 minutes
With pastry blender, cut in cold vegan butter until mixture is like corn meal texture
Add water a little at a time and gently mix in with your hands, until dough begins to clump together
Form a ball of dough with your hands and place on floured surface
Roll dough ball evenly until approximately 1/8 inch thick (should be a bit larger than pie plate)
Fold in half, transfer to and unfold in 9” glass pie plate
Fold edges over rim of pie plate
Crimp edges by pressing thumb or finger around rim, then trim excess with sharp knife
Wrap with plastic place in refrigerator until filling is prepared
Ingredients For Spinach Quiche Recipe Filling:
1 pound firm tofu, crumbled
½ cup raw, unsalted cashews
¼ cup nutritional yeast
Two bunches fresh spinach (washed, stemmed, and finely chopped) or 16 ounces frozen spinach (thawed and drained)
2 Tablespoons extra virgin olive oil
½ small onion (chopped)
1 Tablespoon minced garlic
1 Veggie bouillon cube
½ teaspoon dried marjoram
1 teaspoon dried basil
Pinch of cayenne pepper
½ teaspoon paprika
½ teaspoon Mrs. Dash Table Blend spice mix
½ Tablespoon salt
¼ Tablespoon ground black pepper
Spinach Quiche Recipe Directions:
Preheat oven to 425 degrees
Grind cashes in food processor until in fine crumb form
Add tofu and nutritional yeast, processing until creamy, then set aside
Add oil to large pot, and heat to medium/high
Saute onion for approximately 5 minutes, or until transparent
Add garlic, and continue sautéing until you can smell the fragrance
Add bouillon cube, marjoram, basil, cayenne, paprika, Mrs. Dash, salt and pepper reducing heat and stirring until blended
Add spinach and cook until slightly wilted, and bright green in color
In a large bowl stir together tofu and spinach mixture
If the filling seems too thick, soy milk may be added a tablespoon at a time, or if too runny, add flour (it should be the consistency of a very soft dough in consistency, and hold a shape)
Add filling to the refrigerated crust
Dust with nutritional yeast or Parmesan cheese
Bake at 425 degrees for 10 minutes to set pie
Reduce oven temperature to 375 degrees and bake for an additional 25-35 minutes, or until crust is golden-brown
Cool on wire rack for 5 minutes before serving

This quiche recipe is great for anytime meals. It is very nutritious and best of all, tastes great! Spinach quiche can be served with brown or wild rice, a salad, or just by itself. It is very easy to make, and the beauty of quiche is that you can make your own recipe, and add what you like to it. If you have vegetables that you need to use in the refrigerator, make a quiche out of them. Spicing it up is also a creative and personal thing. Once you have the basic quiche recipe and what holds it together, you can add just about anything that you like!

A variation of this recipe is making spinach quiche tarts for lunch boxes, snacks, or entertaining.

All that you need to do to make spinach quiche tart is to double the crust recipe to make twice as much pie base. Next roll it out, and cut the pastry into 4½ inch rounds (18 in all) to place in two muffin tins. Fill with above spinach mixture, and bake the same way (lessening the baking time to 10-15 minutes, or until golden brown). These are delicious anytime, and they can be made in advance and frozen until you need them.
