Asparagus Quiche Quick and Easy Recipe

Asparagus Quiche Recipe
- 1 pound fresh asparagus – trim and cut into ½ inch pieces
- (2) eight inch unbaked pie shells
- 1 egg white, lightly beaten
- 4 eggs
- 1 ½ cups Half-and Half cream
- ¼ teaspoon ground nutmeg
- Salt and Pepper to taste
- 2 cups shredded Swiss cheese
Preheat oven to 400 degrees
Place asparagus into steamer, covering with about an inch of boiling water, cover.
Steam asparagus until tender, but firm (approximately 2-6 minutes). Drain and cool
Brush pie shells with beaten egg white
Layer cooled asparagus into pie crust
In medium bowl, beat eggs, cream, nutmeg, salt, and pepper.
Sprinkle Swiss cheese over asparagus in crust
Pour egg mixture on top of the cheese
Bake uncovered in preheated oven approximately 34-40 minutes or until firm.
Allow to cool until room temperature to serve (may be served cold also)
This recipe yields (2) eight inch quiches, serving approximately 8-10 people

Basic Pie Crust For Asparagus Quiche Recipe
Asparagus Quiche Ingredients:
- 3 cups whole wheat pastry flour
- 1 teaspoon salt
- ¾ cup margarine or vegan margarine
- 5-6 teaspoons ice-cold water
Asparagus Quiche cooking instructions
Using medium bowl, stir together flour and salt
Cut in margarine with pastry blender until mixture is similar to coarse crumbs
Sprinkle in cold water (1 tablespoon at a time), mixing gently with a for after each tablespoon until the pastry starts to hold together
Shape the pastry into a ball with your hands
Divide the ball into halves, and shape the two into balls
On a lightly floured waxed paper surface, roll the ball with a lightly floured rolling pin until it is about 1/8 inch thick (the rolled pastry should be a bit larger than the pie plate)
With scissors or a sharp knife, trim pastry edges from pie plate, and press thumb or index finger firmly around the outer rim
